YUMMY muffins!

I just made up two batches of these muffins. One to freeze to go with Christmas breakfast, and one to eat! They were D-licious! Just thought I'd share:

Eggnog muffins


3 cups of flour
1/2 cup sugar
3 tsps. baking powder
1/2 tsp. salt
1/2 tsp nutmeg
1 egg
1 3/4 cups eggnog
1/2 cup oil
1/2 cup golden raisins
1/2 cup chopped pecans

1. Mix together first 5 ingredients in a large bowl

2. In seperate bowl combine eggs, eggnog, and oil

3. Add wet ingredients to dry. Stir just until moistened.

4. Fold in raisins and nuts
5. Grease or line muffin tin. Fill 2/3 full (should make about 16-18 muffins)

6. Bake 20-25 min. at 350 degrees

7. Remove from oven, let cool for 5 min, then remove muffins from pan.
